How to mix it
Per bag: add 5.5 L of water and 1.5 L of alcohol. Whisk slowly for 2–3 minutes, then pour into the machine.
Using Specialty Blends wine-based liquor — such as Barajas agave wine or the Dos Locos tequila alternative — use 4 L of water and 3 L of product instead. This is how a venue with only a beer & wine license can run the same program.
Making a smaller batch at home
A full bag makes about 3 gallons — far more than a countertop machine holds. Scale the same ratio down and fill to your machine's max line:

Weigh the mix rather than measuring by cup — powder settles, and the ratio is what makes the texture work. Leaving the alcohol out entirely works too: same mix, same texture, zero alcohol.
